This Greek-inspired cold pasta salad is one of my favorites. It makes a terrific dinner partnered with a simple salad, or as a side dish with a skewer of grilled shrimp or chicken thighs.
1 pound dried orzo
1/4 cup extra virgin olive oil
Juice and grated zest of 2 lemons (about 1/3 cup juice)
1 cup crumbled feta (about 4 ounces)
1/2 cup kalamata olives, pitted and chopped
1 cup chopped fresh parsley
1/3 cup chopped fresh basil
1/4 cup fresh mint
1/4 cup chopped fresh dill
Greens of 4 scallions, thinly sliced
1 teaspoon kosher salt
1/2 teaspoon coarsely ground black pepper
